The New York Post's Page Six Magazine has a great feature, interviewing five chefs on the "rare and unusual" spices they use: Apiary's Neil Manacle on sumac, Elatteria's Akhtar Nawab on fenugreek, Dos Caminos' Ivy Stark on epazote, David Burke on grains of paradise, and Michael Psilakis on machalepi.
