My Hero, The Fearless Chris Cosentino
The Bay Area's first Amuse Cochon event went down this past weekend, pitting five chefs (Ryan Farr, Chris Cosentino, Taylor Boetticher, Allan Benton, and Peter Pahk) against each other to "prepare a 70 pound heritage hog from head to toe." Cosentino was the overall winner and earned the title of the "Prince of Porc." Eater SF had this to say about his dish:
