'Throwdown with Bobby Flay' with Francois Payard, Bûche de Noël Episode [video]
The latest episode of Throwdown With Bobby Flay had Flay challenging François Payard to a bûche de Noël (yule log) bake-off. Payard has actually been dubbed "the king of the bûche de Noël," and his patisserie pumps out 5,000 of them in only five days during Christmas, so Bobby Flay's maple-walnut bûche didn't stand a chance against Payard's modern interpretation using chocolate mousse, hazelnut dacquoise, and hazelnut cream. Payard, as he's applying gold leaf to his bûche: "It's very modern, very classy, very elegant, almost like a woman, doesn't need makeup, just simple and elegant."
Payard is definitely a character: in the videos below, check out Payard popping a wheelie on his motorcycle in Manhattan (!) and messing with Flay's bûche by putting a jalapeno on it. We loved the way Payard pronounced "Bobby" with his French accent, saying "Buhby" a bunch of times.

We think it's clear who won. Sadly, the Food Network didn't post Payard's recipes, only Bobby Flay's.
