Alice Waters Redefines Local
Alice Waters hosted a fundraiser in Washington DC with a series of dinners — $500/plate! — "made from local meat and produce" with chefs flown in from across the country. It being winter, there wasn't much local produce to work with, so several of the chefs, including Dan Barber, Tom Colicchio, and Nancy Silverton, defied the concept of "local" and "chose to ship meat and produce from their home towns." The Feedbag astutely observes:
It’s not 'local' or 'seasonal' if you have to put it on a plane... And we hate to be the first to tell you, Alice, but flying twelve different chefs from around the nation into DC, when you’ve got some perfectly nice ones in town already, might defeat the purpose of your enviro-rants.
