Killer Alinea Video


Here's a video shot at Alinea in Chicago that was filmed as the introduction to the Tokyo Taste Summit in early 2009. No words, no descriptions, just dishes being prepared. Some really gorgeous macro photography alongside a great score.

    Wow, this is one of the most beautiful things I've seen in a while. Would love some description of what I'm seeing - maybe a director's cut with commentary?

  2. Anyone else notice the Volcano vaporizer? What do they use that for?

      Instead of filling the chamber with an illegal substance of some sort, the kitchen uses dried lavender (or another aromatic). What you're seeing here is a baggie being filled with lavender vapor, sealed, and then punctured in random places and finally placed in a linen pillowcase. The lavender pillow is used in service - the weight of the plated dish gradually expells the lavender vapor from the pillow over the duration of the course. Pretty neat, huh?
