Glad I discovered your site!

No 'lights' sold in YankeeLand??... How do Scots in the U.S.A. make Haggis?? (I'm in Canada) This is criminal!!! As a Scot myself, I would simply buy a lamb when the rancher is shipping to market (no prob for me - I was raised on a ranch, and love to hunt), and retreive my own offal; and save money to boot!

If Asians eat lambs lung, and one is near a N. American chinatown... hhhmmm...

Great site!!!

Veronica, thank you for the insight, and thank your dad for trying to broaden your palate. ;)

I'd love some pictures if it's not too much of a hassle. I'm trying to learn as much as I can.

I live in Norway, and we used to have "mashed lungs" for dinner from time to time when I was little, and I am no older than 21.. They still sell the stuff, I have wondered to try it again, because I am the sort of weird person to actually eat and enjoy all sorts of mad dishes... (thank my dad for that gift.. feeding all sorts of stuff..)

I ate it, but I ate several things that I don't touch today because I hate it so. I just ate to keep the peace... I remember hating some of the stuff I had to eat, but I can't remember hating lungs... maybe they are good?

You can actually buy them pre-mashed, just heat them! I can always dig up some pictures if you're interested?

I'm intending on mentioning them in the future when I write about offal related books, but they in fact used Calvin W. Schwabe's "Unmentionable Cuisine" for their information about lungs, which I did mention this week.

Here's another link for you:

I've come across numerous recipes for lungs in the past and would love to be able to try them out. The mention of the Wholesale Meat Act got me curious, so I thought I'd look it up. Among other things, Google gave me this link:

http://books.google.com/books?id=DJDKaxEEfYgC&pg=RA1-PA83&lpg=RA1-PA83&dq=%22Wholesale+Meat+Act%22+1971&source=bl&ots=vPNZ6CeOd9&sig=XfbQESvEzcC1mWs01j0KfrOsWTc&hl=en&ei=zeSOStv5CY6GMbbL1K8K&sa=X&oi=book_result&ct=result&resnum=4#v=onepage&q=%22Wholesale%20Meat%20Act%22%201971&f=false

Perhaps you should have referenced Hopkins, Bourdain, and Freeman's book "Extreme Cuisine" as a source for information in this article?

So sorry you didn't end up being able to find lungs! I racked my brain and didn't know where to start. We have an Italian cookbook here at home with lungs recipes in it... now how will we try them out?

The quest is a little reminiscent of Hungry in Hogtown's search for rabbit ears - you might like this post: http://hungryinhogtown.typepad.com/hungry_in_hogtown/2007/03/earresistible_e.html
