It's an inexpensive alternative to supplies found online at retailers such as La Tienda (that sells Ferran Adria's line of Texturas) or L'Epicerie.

As the price trends downwards for equipment and gear, like the recently-released $399 SousVide Supreme, techniques normally exclusive to restaurants are suddenly much more accessible to the home cook. Democratization!
