Some may want to quote Mr. T and exclaim, "I PITY THE FOOL!" but we're totally impressed since this is, in fact, a truly epic project. His estimate is that it'll take him one year to cook the approximately 50 recipes from the book. And while he's managed to procure most of the necessary ingredients, certain equipment is out of reach for the home cook. For the time being he's been creative, using a crockpot for sous vide cooking and a not-great ice cream machine. What he needs is a Pacojet, a professional vacuum machine, a professional compact electric slicer, and a professional ice cream maker. If you're a manufacturer or a distributor, help the guy out!
